  • 2 slices chicken or turkey bacon
  • 3 shallots, finely diced
  • 1 carrot, finely diced
  • 2 small stalks celery, finely diced
  • 3 cloves garlic, crushed
  • 400g extra lean ground beef
  • 400g chopped tomatoes (canned)
  • 300g gnocchi
  • 120g mature cheddar, grated
  • Olive oil cooking spray
  • Fresh basil leaves for garnish

Instructions

  1. In a large frying pan, spray olive oil and sauté chopped chicken or turkey bacon until golden brown. Set aside.
  2. In the same pan, add shallots, carrot, and celery; cook until softened.
  3. Add garlic and ground beef; cook until browned.
  4. Return bacon to the pan; stir in herbs, tomatoes, tomato paste, stock, and vinegar. Bring to boil then simmer for 20 minutes.
  5. Stir in gnocchi and simmer for an additional 5-8 minutes.
  6. Season with salt and pepper; transfer to a baking dish.
  7. Top with cheddar cheese and broil for about 4 minutes until golden.
  8. Garnish with basil before serving.
