  • 20 oz refrigerated three cheese tortellini
  • 2 Tbsp extra virgin olive oil
  • 1 medium yellow onion, chopped
  • 2 ears corn, kernels cut from cobs
  • 2 cups grape tomatoes
  • 2 medium zucchini, sliced
  • 3 garlic cloves, minced
  • 1 ¼ cups marinara sauce
  • Fresh basil and parsley for garnish
  • Parmesan cheese for topping

Instructions

  1. Boil the tortellini in salted water as per package directions, stopping one minute early.
  2. In a sauté pan over medium-high heat, add olive oil and sauté onions until translucent. Add corn and continue cooking.
  3. Stir in tomatoes and zucchini; cook until tender.
  4. Drain tortellini (reserve some pasta water) and mix with sautéed vegetables and marinara sauce, tossing gently.
