  • 1 pound Lean Ground Turkey
  • 1 medium Yellow Onion, chopped
  • 23 cloves Garlic, minced
  • 1 Red Bell Pepper, chopped
  • 1 Green Bell Pepper, chopped (or Zucchini, chopped)
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Ground Cumin
  • 1/2 teaspoon Dried Oregano
  • 1/4 teaspoon Red Pepper Flakes (optional)
  • Sea Salt and Black Pepper, to taste
  • 1 (14.5 ounce) can Diced Tomatoes, undrained
  • 1 tablespoon Tomato Paste
  • 1/2 cup Chicken Broth (or Vegetable Broth)
  • 4 cups Cauliflower Rice (fresh or frozen)
  • 2 tablespoons Soy Sauce (or Tamari for gluten-free, or Coconut Aminos for soy-free/paleo)
  • 1 teaspoon Sesame Oil (optional)

Instructions

  1. Prep your ingredients by chopping the onion and bell peppers, and mincing the garlic. If making cauliflower rice from scratch, pulse fresh cauliflower florets in a food processor until rice-sized.
  2. Heat olive oil in a large skillet over medium heat. Sauté chopped onion until softened, then add minced garlic until fragrant.
  3. Add ground turkey, breaking it apart as it cooks until browned.
  4. Incorporate bell peppers (or zucchini), spices, salt, and pepper. Cook until vegetables soften.
  5. Stir in diced tomatoes and chicken broth, bring to a simmer for 10–15 minutes.
  6. Prepare cauliflower rice according to package instructions.
  7. Combine turkey mixture with cauliflower rice, drizzle with soy sauce (and sesame oil if desired), toss gently to coat.
  8. Serve in bowls topped with fresh herbs and lime wedges if desired.
