6 large eggs
3 tbsp mayonnaise
1 tsp Dijon mustard
½ tsp Cajun seasoning (plus more for dusting)
½ cup all-purpose flour
1 large egg (for dredging)
1 tbsp milk
½ cup breadcrumbs
1 tsp paprika
½ tsp garlic powder
½ tsp onion powder
Vegetable oil for frying
1 tsp lemon juice
Salt and black pepper to taste
Instructions
Boil the eggs by covering them with cold water in a saucepan. Bring to a boil, then cover and let sit for 10-12 minutes.
Transfer boiled eggs to an ice bath for cooling, about 5-10 minutes.
Peel the eggs, slice in half, and remove yolks into a mixing bowl. Mash yolks and mix with mayonnaise, Dijon mustard, Cajun seasoning, salt, pepper, and lemon juice until smooth.
Set up a dredging station with flour seasoned with salt and pepper in one bowl, beaten egg mixed with milk in another, and breadcrumbs mixed with paprika in the third.
Dredge egg whites first in flour, dip in egg wash, then coat in breadcrumbs before frying.
Heat vegetable oil to 350°F (175°C) and fry egg whites until golden brown (1-2 minutes per side).
Drain excess oil on paper towels. Fill fried egg whites with yolk mixture and garnish as desired.
