  • 2 Packages (6 ounces each) Driscolls Raspberries
  • 1/2 Cup sugar
  • 1 Tsp. vanilla extract
  • 1/4 Cup orange juice
  • 2 Slices sourdough or French bread
  • 2 Tablespoons mayonnaise
  • 2 Ounces Brie (about 4 tablespoons), at room temperature
  • 24 Tbsp. raspberry compote
  • 4 Slices manchego cheese, white cheddar cheese, or provolone cheese
  • 8 Driscolls Raspberries

Instructions

  1. Make the raspberry compote by simmering raspberries, sugar, vanilla extract, and orange juice in a saucepan until thickened.
  2. Spread mayonnaise on one side of two slices of bread.
  3. In a skillet over medium heat, place one slice of bread mayo-side down. Layer with brie cheese and raspberry compote.
  4. Top with slices of manchego cheese and cover with the second slice of bread, mayo-side up.
  5. Grill until both sides are golden brown and cheeses are melted, about 3-4 minutes per side.
