  • 1 tsp active dry yeast
  • 1 Tbsp olive oil
  • 1/2 tsp squid ink
  • 1 cup warm water
  • 4 oz button mushrooms
  • 2 Tbsp plant-based butter
  • 1/2 cup shallots (or red onion)
  • 45 cloves garlic
  • 2 Tbsp cooking apple juice
  • Fresh thyme
  • Jarred pesto sauce
  • Green Pesto Gouda cheese

Instructions

  1. In a mixing bowl, combine bread flour, garlic powder, salt, and yeast.
  2. Add olive oil and squid ink. Gradually mix in warm water until dough forms.
  3. Knead on a floured surface for about 8-10 minutes until smooth.
  4. Place in a greased bowl, cover with a damp cloth, and let rise for about an hour until doubled.
  5. While dough rises, slice mushrooms into skull shapes and sauté with shallots and garlic in butter until tender.
  6. Preheat oven to 450°F (232°C). Roll out dough into flat circles and spread with pesto.
  7. Top with sautéed mixture and bake on parchment-lined sheet for 10-12 minutes until golden brown.
  8. Drizzle with balsamic vinegar mixed with honey before serving.
