  • 2 large baking potatoes
  • 2 tbsp olive oil
  • 1 block (200g) feta cheese
  • 1 head of garlic (top cut off)
  • 1 lemon, quartered
  • Fresh herbs (thyme, oregano, basil)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 200C (390F).
  2. Wash and cube the potatoes. Par-boil them in salted water for 6-8 minutes, then drain.
  3. Place the potatoes in a baking dish. Drizzle with olive oil and season with thyme, oregano, salt, and pepper.
  4. Roast the potatoes for 30-40 minutes until golden brown.
  5. Add the feta cheese and garlic to the dish; squeeze half a lemon over the feta.
  6. Return to the oven for an additional 15 minutes.
  7. Remove from the oven, mash the roasted garlic, mix with lemon juice, and combine with the potatoes.
  8. Drizzle honey over top and garnish with fresh basil before serving warm.
