  • 6 strips turkey bacon
  • 1 lb medium pasta shells
  • 1/4 cup flour
  • 1 cup heavy cream
  • 2 cups milk
  • 2 cups shredded cheddar cheese
  • 1 cup shredded gruyere cheese

Instructions

  1. Slice onions into even, ΒΌ-inch slices.
  2. In a medium skillet, heat butter and olive oil over medium heat; add onions and caramelize for 40-50 minutes, stirring occasionally.
  3. Meanwhile, cut turkey bacon into thirds and cook in a large skillet over low heat until crispy. Reserve drippings.
  4. Boil salted water and cook pasta until al dente; drain.
  5. In the reserved bacon drippings, whisk in flour for about 2 minutes, then gradually add cream and milk while stirring.
  6. Season sauce with mustard powder, thyme, garlic powder, and hot sauce; bring to boil then reduce to simmer.
