  • 1/4 onion
  • 1 garlic clove
  • 1 cup water
  • 1 tbsp chicken bouillon
  • 1/8 cup olive oil
  • 2 cups long grain white rice
  • 1/4 onion (finely diced)
  • 1 garlic clove (finely minced)
  • Pinch of whole cumin
  • 1 1/2 cups water

Instructions

  1. For the tomato sauce: Boil quartered tomatoes, onion, and garlic in water until soft. Blend with additional water and chicken bouillon until smooth.
  2. Toast the rice: Heat olive oil in a large pot, add long grain white rice, and stir for about 5 minutes until lightly toasted. Add finely diced onion after four minutes.
  3. Combine: Stir in minced garlic, chicken bouillon, cumin, water (1 ½ cups), and blended tomato sauce until well mixed.
  4. Cook: Cover and cook on medium heat for about 12 minutes without lifting the lid. Let it rest for an additional 5 minutes before serving.
