  • 2 cups apple cider
  • 3/4 cup unsalted butter, softened
  • 3/4 cup light brown sugar
  • 1/4 cup granulated sugar
  • 2 egg yolks
  • 2 tsp vanilla
  • 1 3/4 cups all-purpose flour
  • 2 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground allspice
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 6 oz cream cheese, cold
  • 3 tbsp granulated sugar
  • 1/2 tsp vanilla
  • 1/4 cup granulated sugar for topping
  • 1/4 tsp ground cinnamon for topping
  • 1/8 tsp ground nutmeg for topping
  • pinch ground allspice for topping
  • 12 tbsp salted butter, melted for topping

Instructions

  1. Simmer apple cider in a saucepan until reduced to about 1/4 cup.
  2. For the cheesecake filling, mix cold cream cheese with sugar and vanilla until smooth.
  3. Cream together softened butter and sugars; add egg yolks and reduced apple cider.
  4. Combine dry ingredients separately and then mix with the wet ingredients.
  5. Preheat oven to 350°F (175°C). Scoop cookie dough onto a lined baking sheet and make an indentation for the cheesecake filling.
  6. Bake for about 11 minutes until edges are golden. Brush with melted butter and sprinkle with spiced sugar topping.
